Ingredients 

  • 2 eggs
  • 1/3 cup coconut flour
  • 2 tablespoon coconut oil (room temperature)
  • 1 tablespoon Stevia or sweetener to taste
  • 1 banana  (mashed)
  • 1/2 tablespoon baking powder
  • 1/4 teaspoon ginger

Instructions how to make gluten-free banana muffins

  • Preheat oven to 350 degrees F
  • Prepare your silicon muffins molds, or coat muffin pans with non-stick spray, or use paper liners
  • Whisk eggs with Stevia
  • Add all the rest ingredients and mix until smooth
  • With a spoon, pour batter into silicon molds
  • Bake in a well-heated oven.
  • Bake for 25 to 30 minutes
