Gorgeous Low-Carb Cake with Coconut Flour And Pecan Nuts

This gorgeous pecan cake may be the ultimate low carb dessert. Tastes like pecan pie, it’s healthy, low-carb, and grain-free desserts in one.

  • Prep time – 10 minutes
  • Cooking time – 20 + 10 minutes

Yields – 12 servings

Ingredients:

  • 8 eggs (separated)
  • 2/3 cup + 3 tablespoons low-carb granulated sugar substitute (Swerve – Erythritol Sweetener (Zero Carb) )
  • 1 cup butter (melted)
  • 1 tablespoon vanilla
  • 3/4 cup + 4 tablespoons pecan nuts (ground)
  • 1 tablespoon baking  powder
  • 1 1/3 cup + 4 tablespoons coconut flour
  • 5 tbsp Sugar-free caramel topping

Instructions how to make pecan cake

  • Prepare two bowls
  • Preheat oven to 350 F
  • Separate egg yolk from whites in two bowls
  • In a large bowl, beat egg whites and 2/3 cup Swerve (or sweetener of choice)
  • Add butter, 2/3 cup ground pecan nuts, coconut flour, and baking powder
  • Mix together with a hand mixer for about 3 minutes
  • Pour batter into a cake pan which has been buttered and floured to ensure easy removal. (You can also use parchment paper)
  • Spread batter evenly over the pan
  • Bake for about 20 minutes
  • Meanwhile, in a small bowl, combine egg yolks, 3 tbsp Swerve, 4 tbsp coconut flour, and vanilla
    Stir well with a fork
  • 10 minutes before the cake is finished baking (after 20 minutes of baking)
  • Take out the cake
  • As soon as the cake comes out of the oven, pour the cake with egg yolk mixture
  • Spread egg yolk mixture evenly over the cake
  • Bake for 10 minutes more
  • Remove cake from the oven
  • Over the still hot cake, pour sugar-free caramel topping
  • Sprinkle 4 tablespoons ground pecan nuts
  • Set aside to cool
  • Serve and enjoy
